How to Make Alfredo Sauce Without Cream Cheese and Flour

This Homemade Skinny Alfredo Sauce is rich and creamy! Made with garlic, light butter, cream, and parmesan-such incredible flavor!You won't be believe it's "lightened up."

Makes 8 ( 1/4 cup ) servings

What ingredients do I need to make this Homemade Skinny Alfredo Sauce?

  • Land O' Lakes light butter made with canola oil® or light butter
  • All Purpose flour
  • Skim milk2 Tbsp fat free half and half cream
  • Garlic powder
  • Light cream cheese
  • Grated parmesan cheese
  • Chopped fresh or dried parsley

How do you make this Homemade Skinny Alfredo Sauce?

Melt butter in a saucepan over medium heat. Whisk in flour until lightly browned, about 1 minute.

Until a roux is made.

Gradually whisk in milk until incorporated, about 1-2 minutes.

Stir in cheeses until melted, about 1-2 minutes.

If the mixture is too thick, add more milk as needed; season with salt and pepper, to taste.

Servings: Makes 8 ( 1/4 cup ) servings

I like to meal prep the 8 servings using 1/4 cup Skinny Alfredo Sauce, 1 cup spaghetti squash, and green beans.

Ingredients:

  • 1 1/4 cups skim milk
  • 2 Tbsp fat free half and half cream
  • 1/4 tsp garlic powder
  • 2 oz. reduced fat cream cheese
  • 3 oz. grated parmesan cheese
  • 2 Tbsp chopped fresh or dried parsley

Directions:

  1. Melt butter in a saucepan over medium heat. Whisk in flour until lightly browned, about 1 minute.  Gradually whisk in milk until incorporated, about 1-2 minutes.
  2. Stir in half and half and garlic powder until slightly thickened, about 1 minute.
  3. Stir in cheeses until melted, about 1-2 minutes. If the mixture is too thick, add more milk as needed; season with salt and pepper, to taste.
  4. Serve over low point pasta, whole wheat pasta, spaghetti squash or zucchini noodles.
